1.ย Roast the Makhana: Heat oil or ghee in a pan. Add makhana and roast on low flame for 5โ€“6 minutes until they turn crisp. Remove and set aside.

2.ย Sautรฉ the Flavor Base: In the same pan, add curry leaves, green chilli, roasted almonds, and chana dal. Sautรฉ for 1โ€“2 minutes until aromatic.

3.ย Add Spices:ย Sprinkle in salt, turmeric, black pepper, and amchur. Mix well.

4.ย Combine:ย Add roasted makhana back into the pan and toss for another 2โ€“3 minutes so the spices coat evenly.

5.ย Cool & Store:ย Let the mixture cool completely before transferring to an airtight jar. Stays crisp for up to a week.
